And without having to buy many more additional items?
The unopened items can be taken to the church food pantry Sunday morning.
We'll probably try to take partial bottles of oil and vinegar to use on Maui (can't carry it on--but maybe it'll travel in the checked luggage in plastic bags?)

For a starter, leave the SPAM for next tenant.
Make a pot of vegetable soup using chicken broth as base. Add tomatoes, carrots, scallions, celery, red pepper, left over potatoes and left over pasta.
Make an omelet with the eggs.
Take unopened pasta and spices home with you.
Eat more than 3 meals a day.
Thanks for the ideas. But I'll pass on the last one. Think I'm already going to have to double up on my visits to the YMCA when I get home.
I think I see:
* Homemade hoummas
* Panko-breaded chicken breasts (baked), with a peach reduction dipping sauce and brown rice
* Grilled vegetables and teriaki beef, with brown rice
* Fresh fruit salad
* Fruit parfait (yogurt, fruit, granola)
And I would donate the Spam to charity. :)
Thank you for the suggestions--they are somewhat along the lines of what I was thinking. I didn't think of the peach sauce, though. That sounds great.
Yes, the Spam will go to charity!
