Taylor is Hubby's teaching assistant again this year. Last school year he was a freshman at Villanova University in Philadelphia. This week Hubby was discussing favorite foods with a couple students and Taylor after class. Taylor contributed this story to the discussion.
Early in his stay in Philadelphia he got homesick for some food from home, so he asked his mother to send him a can of Spam. (Only later did he learn that he could have bought Spam probably in any grocery store in Philadelphia!) In his dorm he made his favorite comfort food: fried Spam, fried rice with eggs, and soy sauce on top. He was very surprised when his dorm mates ridiculed his Spam.
The other students asked Hubby what he thought of Spam. He was very careful in his answer. Criticizing or speaking badly of something or someone is against the aloha spirit. He said he had eaten it, many people eat it, and it is a perfectly acceptable food.
Here's a recipe for this Hawaiian favorite, in case you'd like to try it out:
2 cups leftover rice
1-1/2 cups SPAM, cut into match stick size pieces
1 egg
1 tablespoon soy sauce
3 green onions, thinly sliced
Sesame Oil Heat a small amount of sesame oil into a skillet and brown spam pieces on all sides. Mix in the rice. Mix the egg with the soy sauce and stir into the hot rice and spam. Stir gently until the egg is cooked. Sprinkle green onions on top and serve.

We were spammed to death in the years shortly after WW II and other than baking it with pineapple or just frying slices I don't recall too many recipes for how to eat it. I know some people sliced it, straight out of the can, and made a sandwich.
I have seen literally dozens of recipe BOOKS here for using Spam. My understanding is that most people who eat it here don't eat it cold.
