Frico


After visiting the cheese maker we had a Friulian (this region is called Friuli) specialty for supper called Frico. It is very much a peasant dish: very simple, easy to make, local ingredients, full of calories, real comfort food. It consists of potatoes cooked slowly in olive oil until they completely fall apart; cubed Montasio is then added and stirred until it is fully melted and incorporated into the potatoes. Then the whole thing is cooked until it is crispy on one side, then flipped over and the other side is cooked till crispy.
